- Zucchini Rice Casserole
Got this recipe from fitness.com. Very healthy!
Tip: To remove corn from the cob: Stand an uncooked ear of corn on its stem end in a shallow bowl and slice the kernels off with a sharp, thin-bladed knife. This technique produces whole kernels that are good for adding to salads and salsas. If you want to use the corn kernels for soups, fritters or puddings, you can add another step to the process. After cutting the kernels off, reverse the knife and, using the dull side, press it down the length of the ear to push out the rest of the corn and its milk.
MAKE AHEAD TIP: Prepare through Step 5; cool, cover and refrigerate for up to 1 day. To finish, bake at 375 degrees F until the casserole is hot and the cheese is melted, about 45 minutes. -- posted by mills4realz

- Healthy Ham & Cheese Breakfast Casserole
This healthy update of a traditionally rich ham-and-cheese breakfast strata is made lighter primarily by losing a few egg yolks and using nonfat milk. Gruyere cheese has a delicious, nutty aroma and flavor, which means that with the relatively small amount in this recipe you still get a big impact. To finish the makeover use nutritious, fiber-rich, whole-grain bread instead of white. The results: plenty of flavor, half the calories and one-third the fat of the original. -- posted by mills4realz

- Tutu's Super Crispy Sugar Cookies
From Food and Wine Magazine When I lived on the island of Hawaii, every Sunday I would buy cookies at the farmers’ market from an elderly woman everyone called Tutu, or “Grandmother.” She would sell only one bag per person until she ran out, which took about 30 minutes. Before I moved away, I asked her for the recipe. She gave it to me on the condition that I couldn’t share it with anyone for 25 years. Time has passed, and now I’d like to share it with your readers.—Letter to the Editor by Charlie Griggs; Hoodsport, WA. -- posted by SparkleKristy

Its a really tasty cookie, I found on the back of the Food Club Artificially Flavored Vanilla Chips. I personally do not like Coconut, but I probably ate more cookies than anyone else. They are pretty simple to make and so many people enjoyed them even people who did not like coconut or walnuts. -- posted by Kid Chef Kaelin
